Weekend Cooking!

I’m really trying to get a blogging schedule going, but it will likely be sporadic at best until around September. I work in a college store and this is our busiest time of year. It’s crazy! But I’ve stayed on plan in spite of my heightened anxiety and stress, so that’s good. Tomorrow is weigh-in. I’m optimistic.

Over the weekend, I spend Saturday morning watching Food Network and browsing Pinterest while drinking my coffee (multitasking!), trying to find a new recipe to try so I can blog about it.

This week wasn’t anything terribly new. I made two blog-worthy dishes, but neither were truly NEW to me.

Monday Recipe Review – Weight Watchers Potato Salad

This past weekend, I knew that we were going to have brats for dinner, but I wanted to try something new for a side dish. So I went on a Pinterest treasure hunt and came up with something I rarely make: potato salad.

I rarely make it because my mother-in-law just so happens to make THE best potato salad in the world. She keeps telling me how she doesn’t have a recipe. She just knows what to put in it. I know full well that my potato salad skillz will never match hers, so I never even try.

But you know what? Her recipe is so unhealthy. So deliciously and decadently unhealthy. Mmmmm.

I wanted to challenge myself to see if I could make a decent potato salad that didn’t kill me on Weight Watchers. So thankfully, WW had a recipe I could try!
