Oodles of Zoodles!

A while back, I bought a Veggetti spiralizer. It was about $10 at Walmart, and it looks like this:

I wasn’t sure if I would like using it, so I went with the base model. Spoiler: I’m definitely upgrading!

There are two settings, so I tried both, but I put them in one bowl, so you’re not going to be able to see the difference. Sorry.

Holy shit, they were gorgeous! Zucchini is one of my top five favorite foods. At one point in my life, I was eating at least one zucchini per day. It’s a very versatile food, and I would definitely marry it if I weren’t so happy with my husband.

Oh! Quick side note about zucchini. If you are growing zucchini in your garden, please don’t let it get to be too large. 


If you have to give it its own seatbelt, it’s useless. The natural zucchini flavor is diluted. The seeds are way too big. The flesh on the inside just tastes squishy. The perfect size is what you’d want to use for a zucchini boat. I actually like them even smaller than that, but they would be pointless as Zoodles.

Back on point!

Next, I cut up some beautiful white mushrooms and organic snow peas.


The sauce was made with a teaspoon of flour mixed with a blop of Hoisin sauce, a few shakes of soy sauce and a gurgle of chicken stock.


Everything was prepped, so it was time to get cookin’! I heated the pan for my shrimp (large and raw since I knew it would be cooking a bit longer with the veg).


Take the shrimp out when it’s just done. Add in the peas and shrooms. Cook for a few minutes. Add in the sauce and let it thicken. Add in the Zoodles and put the shrimp back in. Let it cook for about one more minute. It goes fast!


Up in the top right of that picture, you’ll see what appears to be a spiral noodle. It is not! It’s the inside of the zucchini after it’s been spiralized. So bam!

I grabbed my chopsticks and dug in. I got three meals out of this puppy.  Delish!

In other news, I’m going on about a week of doing yoga once a day. I am loving it! My sister and I are starting a 30 day yoga challenge on Monday, so more on that in another post. However, I did get my new monster yoga mat in the mail today. It’s super cushy, so it should help out with my bum knee quite a bit.


I’m about to try it out in a bit, so I’ll write a review.

30 Day Ab & Arm Challenge – Day 7

  
DONE! I was rather quiet this weekend because we were so busy, but I have been keeping up on my challenge! Today was day seven, and the stinkin’ line-up added something new. Holy COW I can feel the burn. Yowza! But it makes me so happy when I’ve completed each day. Yay me! I also can’t wait until the day it gets easier. My poor legs…

I did manage to go for a long walk with my kids. I live in a small town, and they had a block party fundraiser for the 4th of July party we have. The kids and I walked down to the party. On the way, I showed my son the fun of playing with perspective in phototography:

 
And then I wound up walking back home by myself to get the car because we got so much stuff. But I managed to look fabulous the whole time:

 
We had a blast! And even managed to get in some snuggles:

 
I got in another walk on Sunday while my daughter and I were waiting for our clothes to dry at the laundromat:

Motivation Friday and Day Four COMPLETED

First, let’s get this out of the way.  I have completed day four of my 30 Day Challenges that can be found at my As Pounds Go Bye Pinterest Board. It’s definitely getting more difficult even though it’s really only increasing by one on each movement each day. My arms, they are a’burnin’. Yay!

30 Day Challenge: Day Three – Barely

I just completed day three of my 30 Day Ab & Arm Challenge (details can be found on my As Pounds Go Bye Pinterest Board), and tonight, it kind of kicked my ass. I could now feel the muscles that were being worked and could tell that they’ve been used recently. It felt good to get through it. Especially good because my day pretty much sucked.

On my drive home, my car died. Of course, I had just gone to the grocery store and it was around 90 degrees outside. I sat there for about 30 minutes until my husband could come rescue me. It had overheated, and it was getting late, and I still had to make dinner, so we decided to just come back and get it later. Ugh.

I did manage to make an INCREDIBLE dinner. I found inspiration on Pinterest (Pinsperation?) on how to change up my tacos. I made regular old tacos for the family, but for me, I used shredded chicken with black beans and diced tomatoes with green chiles. And then I used lettuce leaves instead of taco shells. These babies were DELICIOUS and only 4 Weight Watchers points each. I had enough points left to have some tortilla chips, too, and I took a bite with each bite of my taco and it tasted a lot like a taco salad. YUM!

After dinner, things went downhill again. While driving out to get my car, my husband’s car’s “Check Engine” light came on and the speedometer stopped working. And it was dark.

Then, the cherry on top turned out to be my knee once again popping out of the socket when I got out of the car.

So YAY! Today is now over. I have completed day three of my challenge and I can now go to bed and restart tomorrow.

Because tomorrow is Motivation Friday, and I have one heckuva blog planned!

30 Day Challenge: Day 2 – Also, Red Lipstick

And now I’m going to spend a little bit of time talking about some changes I’m implementing in my life. As I’ve said in past posts, I’ve started wearing lipstick more often. And, in fact, I have now started wearing RED lipstick more often. I really want to be the kind of woman who can pull off red lips. I already have bright orange red hair, and I’ve been told more than once that my wardrobe is not normal. I embrace this about me. In fact, I noticed that the way I dress has become kind of lax, so I’ve been making more of an effort to look put together. I cannot WAIT until scarf season is once again upon us. And now that I have my boots, I feel quite sophisticated. I’ve become truly inspired to make sure that every day, I look like I’ve put effort into how I look. I am growing out my hair, and I’ve started curling it so that it doesn’t just lay there limply.

So, wearing red lipstick will just take this a couple steps further. There’s something about wearing red lipstick that puts forth an energy of confidence. And there’s no way I can skip make-up if I know I’m going to be sliding on some red lips, you know?

I love the direction my life is heading. I often struggle with anxiety and depression, but when I wear the red lipstick, I find myself smiling more often. I interact with people more. I don’t try and hide. And I like that.

What I’d really like is to find that deeeeeeeeep red matte shade that was worn by almost every woman everywhere in the 50’s. If you know of a good one, let me know.

And yes, day two of the challenge was also completed with the red lips.

30 Day Challenge: Day One

Let me start this post by admitting something. I am SO glad that I publicly announced this challenge earlier today. And I am VERY glad that people commented on that post! Thank you!

Something I have always struggled with, and likely one of the main reasons I am as overweight as I am, is that I make these grand plans and I have all of these goals, and then I don’t tell anyone about them so it’s very easy to just put them off for another day.

I really wanted to do that today.

I came home to utter kid chaos. No one was getting along. I was really tired because my knee kept me up a lot last night aching. I wanted nothing more than to “just start tomorrow”.

But I couldn’t! Because I told you!

My daughter and I painted our nails this evening because she’s that kind of little girl. She has to keep up on her polish. Her toes must sparkle at all times, I tell you! How could she possibly be seen at preschool with worn nail polish!? Yes. I can’t wait until she’s a teenager.

I have recently started wearing lipstick. It started because of a friend of mine hitting a hard patch who also decided to start wearing lipstick. It’s kind of a way to force yourself into the mindset of being fabulous, no matter what you’re doing, you know?

My daughter has completely embraced this trend of mine. I even bought her her own pale pink lipstick to wear. So, after we were done with our nails, she insisted we put on lipstick and she handed me my bright red tube.

Tuesday is a Great Day to Start a 30 Day Challenge (or Two!)

I have never been one of those people who starts things on Monday, or even the beginning of the month. I joined Weight Watchers on May 30th. A Saturday. So when I decide to make another change, Tuesday the 15th sounds like the perfect time to jump in! Let me explain…

I once again spent last evening eating dinner and watching Extreme Weight Loss, and it really got me thinking. Yes, I’m currently on the road to trying to get my knee in working order, but that doesn’t mean I can’t do something about the rest of my body, right?  I was watching the “Mitzi” episode and she was amazingly inspirational. She got into lifting weights and her trainer was a woman in her 70’s who was also fantastically inspirational.

I don’t have any desire to become a body builder, but I would like to start working on the two areas of my body I like the least: my upper arms and my stomach.  I scoured Pinterest last night for 30 day challenges, and I found these:

So I’m going to start them tonight.

Let me state here that I know it’s going to take more than 30 days to accomplish anything, but for the next 30 days, I’ll be doing more than I have before! I just know that what I want so desperately is to wear short-sleeved shirts and not have horrible gravy muscles jiggling when I wave. I want to stop wearing cardigans in the summertime over my sundresses. I want to see more changes in my body, and it’s very obvious that I’ve hit that point in my journey that diet is no longer going to be enough to keep moving forward.

In true “Extreme Weight Loss” fashion, I am going to post my beginning stats tonight. Measurements and pictures. Ugh. I just can’t wait. Don’t worry, though. I’ll hide the pictures behind a break.

Wednesday Weigh-In – Milestone Reached!

Now that was a sweet way to start the day! Actually, it was a very frustrating start to my day. My scale decided that today was the day it was going to hate me. Every time I stepped on it, it gave me a different number. I picked it up and cleaned the feet. I swept the floor under it. I made sure it was in the same exact spot in which it always sits. I was about to ell-my-ess (nice way of saying, “lose my shit”) when it FINALLY started giving me the same weight more than once! Woot!

And then, my Weight Watchers app gave me the great news that I’m now down 25 pounds! Double woot!

That made me wonder just how much 25 pounds looks like. So here you go.

Date Night!

Last night, my husband and I had an opportunity to enjoy a date night! And enjoy it we did. The night began outrageously hot:


Once we got settled at the restaurant, we wound up happily drinking two big glasses of ice water each just so we would feel human again.

Then, we ordered. Sushi! Oh, how I love sushi.
