Oodles of Zoodles!

A while back, I bought a Veggetti spiralizer. It was about $10 at Walmart, and it looks like this:

I wasn’t sure if I would like using it, so I went with the base model. Spoiler: I’m definitely upgrading!

There are two settings, so I tried both, but I put them in one bowl, so you’re not going to be able to see the difference. Sorry.

Holy shit, they were gorgeous! Zucchini is one of my top five favorite foods. At one point in my life, I was eating at least one zucchini per day. It’s a very versatile food, and I would definitely marry it if I weren’t so happy with my husband.

Oh! Quick side note about zucchini. If you are growing zucchini in your garden, please don’t let it get to be too large. 

If you have to give it its own seatbelt, it’s useless. The natural zucchini flavor is diluted. The seeds are way too big. The flesh on the inside just tastes squishy. The perfect size is what you’d want to use for a zucchini boat. I actually like them even smaller than that, but they would be pointless as Zoodles.

Back on point!

Next, I cut up some beautiful white mushrooms and organic snow peas.

The sauce was made with a teaspoon of flour mixed with a blop of Hoisin sauce, a few shakes of soy sauce and a gurgle of chicken stock.

Everything was prepped, so it was time to get cookin’! I heated the pan for my shrimp (large and raw since I knew it would be cooking a bit longer with the veg).

Take the shrimp out when it’s just done. Add in the peas and shrooms. Cook for a few minutes. Add in the sauce and let it thicken. Add in the Zoodles and put the shrimp back in. Let it cook for about one more minute. It goes fast!

Up in the top right of that picture, you’ll see what appears to be a spiral noodle. It is not! It’s the inside of the zucchini after it’s been spiralized. So bam!

I grabbed my chopsticks and dug in. I got three meals out of this puppy.  Delish!

In other news, I’m going on about a week of doing yoga once a day. I am loving it! My sister and I are starting a 30 day yoga challenge on Monday, so more on that in another post. However, I did get my new monster yoga mat in the mail today. It’s super cushy, so it should help out with my bum knee quite a bit.

I’m about to try it out in a bit, so I’ll write a review.

Hey! I found my motivation again – on Pinterest!

As everyone following this blog has figured out by now, I have really been struggling for the past month or so. What with illness and anxiety and life in general getting in the way of things, I have noticed that my dedication to losing weight has wavered. I have really been trying so hard to keep holding on. I refused to let go of the lifeline. I was determined not to give up. I knew that if I just held on and did little things in the right direction, I would find that wave again and be able to ride it. I knew it would happen. I kept the faith.

Today, I feel renewed, and I am totally going to run with it. Maybe this is the wave I’ve been waiting for. I am on my surfboard and ready to go!

There is something about autumn that seems to rejuvenate me in ways that other seasons do not. I feel cleansed and happy. I get to wear my scarves again, and my cardigans. I can throw on a jacket and life somehow just feels better.

It also helps that I am madly in love with autumnal vegetables. I have already baked a few acorn squashes and plan to expand on that. I want to experiment with veggies I haven’t yet tried. I want to learn new ways to cook old favorites. And I WILL be making a squash soup in the near future.

30 Day Challenge: Day Three – Barely


I just completed day three of my 30 Day Ab & Arm Challenge (details can be found on my As Pounds Go Bye Pinterest Board), and tonight, it kind of kicked my ass. I could now feel the muscles that were being worked and could tell that they’ve been used recently. It felt good to get through it. Especially good because my day pretty much sucked.

On my drive home, my car died. Of course, I had just gone to the grocery store and it was around 90 degrees outside. I sat there for about 30 minutes until my husband could come rescue me. It had overheated, and it was getting late, and I still had to make dinner, so we decided to just come back and get it later. Ugh.

I did manage to make an INCREDIBLE dinner. I found inspiration on Pinterest (Pinsperation?) on how to change up my tacos. I made regular old tacos for the family, but for me, I used shredded chicken with black beans and diced tomatoes with green chiles. And then I used lettuce leaves instead of taco shells. These babies were DELICIOUS and only 4 Weight Watchers points each. I had enough points left to have some tortilla chips, too, and I took a bite with each bite of my taco and it tasted a lot like a taco salad. YUM!


After dinner, things went downhill again. While driving out to get my car, my husband’s car’s “Check Engine” light came on and the speedometer stopped working. And it was dark.

Then, the cherry on top turned out to be my knee once again popping out of the socket when I got out of the car.

So YAY! Today is now over. I have completed day three of my challenge and I can now go to bed and restart tomorrow.

Because tomorrow is Motivation Friday, and I have one heckuva blog planned!

Recipe Monday – Delish Casserole Edition!

My family LOVES tamales. In fact, it’s ridiculous how much my 7 year old son loves tamales. So when I saw that I had a bunch of shredded chicken that needed to get used up, I knew this recipe would be a hit. And it was!

Chicken Tamale Casserole


This dish was DELICIOUS, and after putting the recipe into my handy Weight Watchers app, it turned out to be 10 points per serving. I didn’t see anywhere in the recipe where it said how many servings it made, but I figured it to be about 8. It could have easily been made in a smaller casserole dish and made thicker, but the servings would have been more points, and I really just liked that it wasn’t super thick and bready. Lots of chicken. Lots of flavor. And I’m going to eat leftovers tonight!

Also, I seriously need to get my hands on more of these things pictured below. I bought a small bag at the tea shoppe the other night to try them and WOW I am hooked!


Veggie chips! I want more! The whole bag was 1 point. Must! Have! More!

Monday Mealtime – What I’ve Been Making

BE FOREWARNED: I started this blog post on Monday, but just realized that I never finished it up. Go me! So…let’s travel back to Monday, that awesome day when I had a day off and I was not sitting at my desk at work. Oh, those were the days…

Today is Labor Day, which means I am home with the kids. I am planning to make brats for dinner, and I really want to finally try a quinoa recipe. I bought the quinoa, and now I’ve overwhelmed myself on Pinterest. While I’m trying to whittle down what to make, check out what I’ve been cooking!

Update: Quinoa is gross. I will never post about it again. Pinky promise.

Fish & Chips – Fried Vs. Baked

This past week, the family was reminiscing about a recent trip to Canada, which made my husband crave the fish & chips we had there. We went to a little hole-in-the-wall chippie place in Ontario and it was glorious.

There was no way I could really replicate the freshness of the fish, me being all land-locked in Iowa and all, but I was going to give it a try!

Even better – I was going to make his the traditional way and mine baked (healthier!), and we were going to taste test.

Motivation Friday – ALL THE THINGS IN ONE POST!

I am getting closer and closer to the busiest three weeks of my entire year at work. In the chaos and stress, I hold tight to Weight Watchers, knowing that no matter what, I can control what I put in my face. It’s actually quite comforting. That and the Zoloft works wonders!

I made an amazing meal this week that I have to share. It’s going to be like food porn, so beware. Spinach and cream cheese stuffed chicken breasts with a bit of Panko and Parmesan on top served with spinach couscous and roasted Brussells sprouts.  It was so good that I’m going to show you the whole meal, and then cover each part on its own:

Weekend Cooking!

I’m really trying to get a blogging schedule going, but it will likely be sporadic at best until around September. I work in a college store and this is our busiest time of year. It’s crazy! But I’ve stayed on plan in spite of my heightened anxiety and stress, so that’s good. Tomorrow is weigh-in. I’m optimistic.

Over the weekend, I spend Saturday morning watching Food Network and browsing Pinterest while drinking my coffee (multitasking!), trying to find a new recipe to try so I can blog about it.

This week wasn’t anything terribly new. I made two blog-worthy dishes, but neither were truly NEW to me.

Monday Recipe Review – Weight Watchers Potato Salad

This past weekend, I knew that we were going to have brats for dinner, but I wanted to try something new for a side dish. So I went on a Pinterest treasure hunt and came up with something I rarely make: potato salad.

I rarely make it because my mother-in-law just so happens to make THE best potato salad in the world. She keeps telling me how she doesn’t have a recipe. She just knows what to put in it. I know full well that my potato salad skillz will never match hers, so I never even try.

But you know what? Her recipe is so unhealthy. So deliciously and decadently unhealthy. Mmmmm.

I wanted to challenge myself to see if I could make a decent potato salad that didn’t kill me on Weight Watchers. So thankfully, WW had a recipe I could try!

I Haven’t Forgotten About You, Blog!


I have been so busy, I’ve put off blogging! And I don’t like it! I even missed a two Weigh-In Wednesday posts, but I didn’t miss my actual weigh-in. The first one, I gained a few. The second one (two days ago), I lost those and a few more. I figured out that I actually wasn’t eating enough. Yes, you read that right. The week that I gained, I had a few days where I still had 15+ points left over. The next week, I made sure to get them all taken care of. Plus, that second week I got hit by the most horrible summer cold I’ve had in years. I was down for three days, unable to do more than shove Kleenex up my nose, cower on the couch, and binge-watch “Supernatural”. I’m feeling better, thank goodness, and I’m ready to keep moving forward!

I am also now less than 2 pounds away from getting my next Weight Loss Bracelet bead! And I don’t have one yet! I need to take care of that.

There are a lot of things going on right now. Work is crazy. My life is nuts. Changes could be on the horizon.

And I’m out of grits.

Another thing to add to the to-do list.

I’ll hopefully write more this weekend. I’m planning to set up a posting schedule. Mondays will be to cover my favorite recipe/food item that I’ve tried in the past week. Wednesdays will be for weigh-in and a synopsis of how my week went. Fridays will be for things I’m looking forward to when I lose weight. Since it’s Friday, I’ll leave you with this. I want to wear this outfit. This is the look I want. Girly, flouncy and feminine, but with combat boots.
